Stachys byzantina 'Helene Von Stein', also known as Lambs' Ears, is a delightful perennial primarily valued for its incredibly soft, velvety, silver-green foliage, though it infrequently produces flowers. The shape and texture of the leaves are reminiscent of a lamb's ear, which children enjoy rubbing between their fingers. Each leaf is covered in dense, matted, short, woolly hairs. This plant tolerates heat well and is resistant to deer and rabbits.
